Christmas Turkey & Ginger Fried Rice

  • 1 tbs vegetable oil
  • 40g ginger, julienned finely
  • 2 garlic cloves, chopped
  • 2 medium eggs, beaten
  • 300 - 500g leftover turkey (you can use leftover ham too or a mixture of both)
  • 200g Jasmine/ Basmati Rice or 500g microwavable rice
  • 2 tsp light soya sauce
  • ¼ tsp caster sugar
  1. Cook the rice according to the packet instructions. Best cooked the day before. Fluff up the rice with a fork and let it cool. The rice should be fluffy and not clumpy. Alternatively you can use microwaveble rice. 
  2. Diced turkey or ham if using
  3. Heat oil in wok or frying pan in medium to high heat. Fry garlic and ginger until ginger softened, about 1 minute. Add turkey and fry for 2 mins to warm through. Push the turkey to the front of the pan to leave a space to pour your eggs in. Scrambled the eggs till 60% is solidifed then fold in the turkey. Stir fry until eggs begin to solidify
  4. Add rice, soya sauce and sugar to the turkey and eggs mixture. Make sure to break up any clumps of rice. Fry for 2 - 3 minutes, make sure the rice is piping hot and everything has incorporated well. Taste and adjust seasoning if necessary.
  5. Turn off the heat and enjoy hot or at room temperature.
