"Ping!" Salmon with Ginger, Spring Onions and Coriander

When I was on MC, my name was associated with a particular kitchen equipment which makes the same noise. Although my mum won’t have one, I find it super useful for times I needed a quick meal. I love steamed fish and I find the microwave does the job much quicker than a steamer! Ping!

  • 2 salmon fillets
  • 10 – 15g ginger, thinly julienned
  • 1 spring onions thinly julienned
  • a handful of roughly chopped coriander
For the Sauce
  • 2 tablespoon of soy sauce
  • 1 tsp Shaoshing wine
  • 1/2 teaspoon sugar
  • 2 tablespoon of vegetable oil
  • 1 teaspoon of sesame oil
  1. Put the fillets in a microwavable dish, sprinkle with ginger and cover with clingfilm.
  2. Mix soy sauce, sugar and shao shing wine in a small bowl.
  3. Put fish in the microwave for 1 minute on high heat
  4. Remove and pour the soy sauce mixture over the fish.
  5. Top with half of the spring onions and coriander, recover with cling film and cook for another 1.5 minutes or until your salmon is just cooked...Don't nuke it!
  6. Remove the cling film and top with the rest of the spring onions and coriander.
  7. In a pan, heat the oil until it is smoking, pour onto the fish (it will sizzle).

Serve hot with rice.
