My Mum's CNY Cookies 'Hup Toh Soh'

Every year when I was a child my mum and I would make these cookies. Well she would make I would watch! Then she will box it up to send to her clients and sometimes family (if there is any leftover) a month before Chinese New Year. My mum love to make cookies or other edible treats to send as gifts and I think it is the best gift ever as it is always made with love and with the best ingredients available. Most of all it is her time and effort in making such gifts. These cookies hold such fond memories for me. They contain roasted cashews and no dairy. They are crumbly and smell fantastic. They are also very easy to make. This year, Valentines Day and Chinese New Year is so close together so I thought this recipe is perfect if you want to give someone something that is handmade and create your own little memory.

Makes about 60 Cookies

  • 600g flour, sifted
  • 2 tsp baking powder
  • 1/3 tsp bicarbonate of soda
  • 2 tsp salt
  • 250g icing sugar
  • 250g cashews, lightly roasted and roughly chopped
  • 375ml vegetable oil
  • 2 egg yolks
  1. Preheat oven at 180 fan and roast the cashews for 10 mins. Cool and roughly chop.
  2. In a large mixing bowl, place all ingredients except for the egg yolks. Mix well. Dough will feel a little crumbly but it is normal and will come together when rolled out
  3. Working in small batches, place on flat surface to form a dough and roll out about 1cm thick
  4. Cut out the cookies with your favourite cookie cutter
  5. Place on a baking tray with space between the cookies.
  6. Brush with egg yolk.
  7. Bake for 20 – 25 minutes at 150°C fan
